Lion's Mane

Lion’s mane mushroom, Hericium erinaceus, are named after their shaggy white appearance, which resembles a lion's mane or white monkey head and are indigenous to North America, Europe, and Asia. They have a meaty texture, seafood flavour, and are commonly eaten for their health benefits as they contain a compound called erinacines which has been shown to have nerve-regenerative effects. Thinly sliced they are great in soups and stir fries, also shredded wonderful as a vegan crabby patty.
