At Fungi Co HQ we have plenty of fungi to play with in beverages and delectable dishes. Last week Peter invented the Jade Enoki cocktail. Enoki is a delicately sized mushroom, sweet tasting and crispy when raw. Cocktail has vodka and lime with champagne added for sweetness and spritz. Then a garnish of floating enoki is added. It looks charming and tastes lovely.
Other mushroom cocktails use infused mushroom spirits with the earthy flavours of truffles or the bitterness of reishi. There is plenty of scope to develop and try different fungi for their characteristics. I'm keen to use nameko with its nutmeg aroma in a brandy alexander cocktail or reishi infused vodka in a white russian.
