Pholiota nameko is a golden brown mushroom with a rough looking stem. As a smaller mushroom its cap is quite slippery and at this stage used in soups and stews. The larger mature mushroom develops a wavy cap and becomes drier with a dark brown coating of spores.

Nameko has a nutmeg aroma and a meaty flavor something akin to pork or chicken. It is a slow growing mushroom and your patience will be rewarded with its fine eating. At Fungi Co headquarters Nameko is harvested when mature and cooked in white wine, nutmeg and cream sauces for pasta dishes or when younger for miso soup.
